SafAle K-97 is a German ale yeast selected for its ability to produce a fine-bubbled, stable foam head — making it an outstanding choice for wheat beers, Kölsch, and other top-fermented German styles. Its neutral, clean fermentation profile lets malt and hop character shine through while producing beers with excellent clarity and a creamy, persistent head.
Suitable for Kölsch, German Wheat Beer, Altbier, Blonde Ale, and other top-fermented styles.
Attenuation: High (80–84%)
Flocculation: Low to Medium
Fermentation Temp: 54–77°F (12–25°C), ideally 59–68°F (15–20°C)
Alcohol Tolerance: Medium
Usage: Pitch directly into wort. Recommended pitch rate 50–80g/hL.
Storage: Store in the fridge. Use before expiry date printed on packet.
